A two day winter itinerary shaped by quiet streets, candlelit tables, and the simple pleasure of returning indoors. From cultural afternoons to long breakfasts and evenings well spent, this is Amsterdam at its most considered, with The Dylan as your canal side retreat. Allow our concierge team walk you through their idea of the best winter escape in Amsterdam.
Arrive to Amsterdam

Arriving at The Dylan in the afternoon allows you to settle before dusk, when the Keizersgracht feels almost private. Check in, leave the city at the door, and take a moment in your room or suite. Explore the surroundings and enjoy a stroll through ”The Nine Streets Area”, just beyond the front door, where many quirky boutiques as well as art galleries glow after dark. Our concierges recommend Tertius Gallery to be a worthwhile pause along the way, where historic master paintings sit comfortably alongside objects d’art and carefully chosen designer furniture.
Evening one, close to the fire

Return to The Dylan as the evening sets in. Your first night doesn’t need to be busy. Many guests choose to begin with cocktails at Bar Brasserie OCCO, right next to the fire, or start late afternoon with our a Dry Wine, that is available throughout the month of January. Your Winter Escape includes a restaurant credit, best approached not as a discount but as an invitation, and is ideal for using towards drinks and a relaxed supper at OCCO. In winter, the restaurant’s atmosphere shifts. Candlelight takes precedence, dishes lean seasonal, and service feels especially personal. Order simply. A shared starter, something warming from the kitchen, a glass of wine or a well made cocktail. If you prefer to dine out, the neighborhood offers excellent alternatives within walking distance. Our concierge Cem recommends Verlan, a lively contemporary restaurant in a converted warehouse, at just a 3 minute walk.
Morning one
Breakfast at OCCO is included, and winter mornings are made for lingering. Coffee refilled without asking, newspapers within reach, the room still quiet as the city wakes. After breakfast, concierge Ronald often recommends choosing one cultural focus for the day rather than many. Museums are calmer in winter, and a single exhibition can be given proper attention. ”In the Stedelijk Museum of contemporary art, a broad retrospective of Dutch photographer Erwin Olaf is on display until 1 March: Erwin Olaf: Freedom.

If museums are not top of our list, Amsterdam offers other ways to unsdertand its history: a private driver meets you at The Dylan and brings you to GASSAN Diamonds, a family owned diamond factory. During a private tour, you are introduced to the city’s long relationship with diamonds, from its role as a global trading centre to the precision of modern goldsmith craftsmanship. Live polishing demonstrations reveal the skill and patience behind each stone, with the visit concluded at a relaxed pace, accompanied by a glass of Champagne, with compliments of GASSAN.
An immersive afternoon
The day continues westward, to the Westerpark. For lunch, our concierges recommend Cantine de Caron, set within the park’s historic Westergas complex. French in spirit but relaxed in execution, this restaurant is well suited to a winter afternoon. Just steps away, the afternoon becomes immersive at Fabrique des Lumières. Housed in a monumental former gasworks, the current Dutch Masters programme brings works by Rembrandt, Vermeer and their contemporaries in motion.
By late afternoon, returning to The Dylan feels instinctive. After a day spent outdoors and on foot, a pause indoors is part of the rhythm. A warming bath before the evening settles feels entirely justified in winter, when the cold lingers and time slows.
As daylight fades
With warmth restored and daylight fading, the city calls once more. Until 18 January, the Amsterdam Light Festival adds a contemporary layer to the historic canal belt, with carefully placed installations that reveal the city in a different register. A guided walking tour offers context and storytelling, while a private canal cruise provides warmth and a different perspective. From the water, light, architecture, and reflection come together quietly, an evening experience shaped less by spectacle than by atmosphere.

Upon returning, settle in for an aperitif in one of the hotel’s quieter corners, perhaps the same intimate spot that held last night’s conversation, familiar now, and all the better for it.
As evening settles, dinner comes into focus. Staying in, Restaurant Vinkeles offers refined gastronomy in a distinctly unique setting, housed in an eighteenth century former bakery. Your package credit may be applied here, adding a thoughtful note to an already considered experience. For those heading out, Zoldering and SINCK provide more relaxed alternatives, both well suited to a winter evening before returning to the quiet comfort of The Dylan.
Depart unhurried
On your final morning, breakfast becomes a closing ritual rather than a prelude. Say goodbye to the familiar faces that made you feel at home and make a note of places to return to in another season.
