A historical environment with 41 unique hotel rooms, 4 private rooms for meetings & events and three restaurants: Bar Brasserie OCCO, Two Michelin star awarded Restaurant Vinkeles, and the smallest fine-dining restaurant in The Netherlands, até.
In the heart of the hotel is Bar Brasserie OCCO. Here, we focus on quality regional products, craftsmanship, and personal service. We welcome our local and international guests in the casual Brasserie, at the Bar, or in our cozy lounge for lunch, High Wine, dinner, a cup of coffee, or a creative cocktail.
The Dylan Amsterdam is looking for a driven and inspiring Sous Chef for Bar Brasserie OCCO.
As Sous Chef, you will continuously focus on creating the “wow” factor for our guests and actively contribute to the team’s ambition to earn a Bib Gourmand for Bar Brasserie OCCO. In this role you will work closely with our Chef de Cuisine, Stefan Schuchard, who is responsible for the daily management of the kitchen. Our Executive Chef, Jurgen van der Zalm, is closely involved in OCCO’s ambitions.
Together with Stefan, you ensure the smooth running of daily operations and, with the team, deliver dishes that reflect quality and creativity, consistently surprising our guests. You support colleagues in their development, contribute to a positive and professional working environment, and make sure processes run efficiently. In addition, you monitor food costs and the HACCP structure, oversee kitchen operations, and step in where needed. You also take part in developing new dishes and menus, actively join tastings, and contribute creative ideas that help OCCO stand out within Amsterdam’s dynamic hospitality scene.
